Ginger and tamarind cooked with a little jaggery: sweet, sour and warm at once. Medium heat, and the partner pesarattu has been waiting for.
Allam pachadi is breakfast's pickle. In Andhra homes a crisp green-gram pesarattu without allam pachadi on the side feels unfinished, and this jar is made for exactly that plate. Ginger brings a clean, warming bite; tamarind gives it a sour backbone; a little jaggery rounds both off. So the first taste is gently sweet, then sour, and then the ginger and chilli arrive together. It's 2 of 3 on our chilli scale. The texture is smooth and spoonable rather than chunky, so it sits as easily next to idli or upma as it does next to pesarattu. Many families also grind a ginger chutney on the day; this version is cooked to keep, which makes the ginger mellower and the sweet-sour balance more settled. If the jaggery note is what you like, our bellam avakaya takes the same idea into a mango pickle.
These come from the printed label, so they are added when this jar goes on sale. Nothing here is guessed.
Questions
Slightly. The jaggery takes the edge off the tamarind and ginger, but it's still a sour, warm pickle, not a sweet chutney.
Medium: 2 of 3 on our chilli scale. Most of the warmth comes from the ginger.
