How our pickles are made

Every jar starts in a small kitchen, not a factory line. The women who make our pickles have cooked them for their own households for years, and they still work the same way: mangoes cut by hand, chillies ground in small lots, podis roasted a pan at a time.

We don’t use their names or photos. The food is the point.
