About this podi

Munagaku is the Telugu name for the leaves of the drumstick tree, the same tree that gives the long drumstick pods in sambar. The leaves are small and grassy when raw. Roasted with dals, garlic and red chilli and ground into a podi, they turn earthy, savoury and slightly bitter in a pleasant way, a little like toasted green tea meeting a dal podi. It's 2 of 3 on our chilli scale. This is the same style of podi as the one in the moringa ghee podi rice on our Hyderabad Thursday lunch menu, so it's a way to have that dish at home on any day of the week. The powder is a deep green-brown and fine enough to coat every grain of rice. It makes a good second podi once you know kandi podi: a familiar dal base with a green flavour on top.
